800 g firm-cooking potatoes (best cooked the day before)
250 g cooked beef (soup meat, e.g. boiled beef)
1 red onion
2 tbsp clarified butter (for frying)
salt
pepper (from the mill)
cumin
2 tbsp freshly chopped parsley
Instructions
1. Peel the potatoes and cut them into approximately 3-4 mm thick slices. Cut the meat into strips or cubes. Peel the onion, halve it, and slice it.
2. In a hot pan, sauté the potatoes in clarified butter for 4-5 minutes until they are lightly golden brown. Then add the onion and meat, and fry everything together until crispy for about 5 minutes.
3. Season with salt, pepper, and caraway seeds, and serve garnished with fresh parsley.
