  1. 1. Wash the beets and bake them unpeeled for 50 minutes at 200 degrees Celsius until tender.
  2. 2. Take the beets out, peel them, and slice them lengthwise into thin slices. Let them cool.
  3. 3. Mix the cottage cheese, quark, chopped chives, salt, and pepper in a bowl.
  4. 4. Fry the walnuts in the butter briefly and let them cool.
  5. 5. Spread the quark mixture thinly over the beet slices. Roll them tightly into roulades.
  6. 6. Place the roulades in a baking dish. Add the remaining butter on top and bake for 15 minutes at 180 degrees.
