  1. 1. Peel the potatoes and slice them thinly.
  2. 2. Cut the onions into fine strips.
  3. 3. Fry the potatoes and onions in olive oil over medium heat for about 20 minutes until soft, but not brown.
  4. 4. Whisk the eggs in a large bowl and stir them into the drained potatoes.
  5. 5. Pour the mixture into a non-stick pan and fry it over low heat for about 8 minutes until firm.
  6. 6. Turn the tortilla out onto a large plate and slide it back into the pan.
  7. 7. Fry the second side for another 6 minutes until golden brown.
  8. 8. Let the tortilla cool for a few minutes and cut it into pieces.
