  1. 1. Peel the potatoes and slice them thinly.
  2. 2. Slice the onion into thin rings.
  3. 3. Fry the potato slices and onion rings in olive oil over medium heat until tender but not brown (approx. 15 minutes).
  4. 4. Drain the oil and let the vegetables cool down.
  5. 5. Whisk the eggs in a large bowl.
  6. 6. Mix the cooled vegetables with the eggs and season with salt.
  7. 7. Fry three small tortillas in a non-stick pan over low heat until golden brown on both sides (approx. 4 minutes per side).
  8. 8. Let the tortillas cool completely and cut them into small triangles.
  9. 9. Mix yogurt, mayonnaise, pressed garlic, lemon juice, and parsley for the aioli.
  10. 10. Skewer one tortilla triangle per wooden toothpick and serve with aioli.
