🥔 Mini Tortilla Pinchos with Aioli

Ingredients
- 400 g Potatoes
- 100 g Onion
- 3 Stück Eggs
- 3 EL Olive oil (for frying)
- 1 Prise Salt
- 50 g Yogurt (plain)
- 1 Stück Garlic clove
- 50 g Mayonnaise
- 1 TL Lemon juice
- 1 EL Parsley, chopped
Instructions
- 1. Peel the potatoes and slice them thinly.
- 2. Slice the onion into thin rings.
- 3. Fry the potato slices and onion rings in olive oil over medium heat until tender but not brown (approx. 15 minutes).
- 4. Drain the oil and let the vegetables cool down.
- 5. Whisk the eggs in a large bowl.
- 6. Mix the cooled vegetables with the eggs and season with salt.
- 7. Fry three small tortillas in a non-stick pan over low heat until golden brown on both sides (approx. 4 minutes per side).
- 8. Let the tortillas cool completely and cut them into small triangles.
- 9. Mix yogurt, mayonnaise, pressed garlic, lemon juice, and parsley for the aioli.
- 10. Skewer one tortilla triangle per wooden toothpick and serve with aioli.
