  1. 1. Cut the peeled potatoes into very small cubes.
  2. 2. Sweat the potato cubes in 1 tablespoon of olive oil over medium heat for approx. 10 minutes until soft.
  3. 3. Cut the cucumber into small cubes and chop the mint finely.
  4. 4. Whisk the eggs with salt, pepper and lemon juice in a bowl.
  5. 5. Add the warm potatoes and cucumber to the egg mixture.
  6. 6. Stir in the chopped mint.
  7. 7. Heat remaining oil in a small non-stick frying pan.
  8. 8. Pour the mixture into the pan and press it flat.
  9. 9. Fry the tortilla over medium heat for approx. 4 minutes until the base is firm.
  10. 10. Flip the tortilla onto a large plate.
  11. 11. Slide the tortilla back into the pan and fry for 2 minutes on the other side.
  12. 12. Turn out the finished tortilla onto a board and cut into wedges.
