🍳 Cucumber-Mint Tortilla

Ingredients
- 5 Stück Eggs (Size M)
- 1 Prise Salt
- 1 Prise Black pepper
- 2 Esslöffel Olive oil
- 250 g Potatoes (waxy)
- 100 g Cucumber (peeled)
- 10 g Fresh mint
- 1 Teelöffel Lemon juice
Instructions
- 1. Cut the peeled potatoes into very small cubes.
- 2. Sweat the potato cubes in 1 tablespoon of olive oil over medium heat for approx. 10 minutes until soft.
- 3. Cut the cucumber into small cubes and chop the mint finely.
- 4. Whisk the eggs with salt, pepper and lemon juice in a bowl.
- 5. Add the warm potatoes and cucumber to the egg mixture.
- 6. Stir in the chopped mint.
- 7. Heat remaining oil in a small non-stick frying pan.
- 8. Pour the mixture into the pan and press it flat.
- 9. Fry the tortilla over medium heat for approx. 4 minutes until the base is firm.
- 10. Flip the tortilla onto a large plate.
- 11. Slide the tortilla back into the pan and fry for 2 minutes on the other side.
- 12. Turn out the finished tortilla onto a board and cut into wedges.
