  1. 1. Peel the potatoes and slice them into very thin slices or small cubes. Peel the onions and cut them into thin strips as well.
  2. 2. Heat the olive oil in a large frying pan over medium heat. Add the potatoes and onions and simmer for about 15 minutes until they are soft but not brown.
  3. 3. Whisk the eggs in a large bowl and stir them with the salt into the drained potatoes and onions. Let the mixture rest for 5 minutes so the eggs can absorb the potatoes.
  4. 4. Return the mixture to the pan with some new oil. Cook over medium heat for about 4 minutes until the bottom is set.
  5. 5. Place a large plate over the pan. Hold both firmly and flip the pan so the tortilla is on the plate. Slide it back into the pan and cook for another 3-4 minutes on the other side.
  6. 6. Remove the tortilla from the pan and let it cool for 10 minutes before cutting it into wedges.
