🥘 Classic Spanish Potato Tortilla

Ingredients
- 600 g Potatoes
- 200 g Onions
- 6 Stk Eggs
- 150 ml Olive oil
- 10 g Salt
Instructions
- 1. Peel the potatoes and slice them into very thin slices or small cubes. Peel the onions and cut them into thin strips as well.
- 2. Heat the olive oil in a large frying pan over medium heat. Add the potatoes and onions and simmer for about 15 minutes until they are soft but not brown.
- 3. Whisk the eggs in a large bowl and stir them with the salt into the drained potatoes and onions. Let the mixture rest for 5 minutes so the eggs can absorb the potatoes.
- 4. Return the mixture to the pan with some new oil. Cook over medium heat for about 4 minutes until the bottom is set.
- 5. Place a large plate over the pan. Hold both firmly and flip the pan so the tortilla is on the plate. Slide it back into the pan and cook for another 3-4 minutes on the other side.
- 6. Remove the tortilla from the pan and let it cool for 10 minutes before cutting it into wedges.
