  1. 1. Peel the potatoes and cut them into thin slices or cubes.
  2. 2. Slice the onions into thin strips.
  3. 3. Heat the olive oil in a large non-stick skillet (approx. 22 cm diameter) and cook the potatoes and onions over medium heat for about 15 minutes until tender, without browning.
  4. 4. Whisk the eggs in a large bowl and stir them into the drained potatoes and onions. Season with salt.
  5. 5. Pour the mixture into the still-hot skillet and flatten it. Cook over low heat for about 4 minutes until the bottom is set.
  6. 6. Place a large flat plate over the skillet and quickly flip the tortilla so it lands on the plate.
  7. 7. Slide the tortilla back into the skillet to cook the other side for about 3-4 minutes.
  8. 8. Turn out the finished tortilla onto a plate and cut into squares or triangles.
