  1. 1. Peel the potatoes and onion. Slice the potatoes very thinly (or into fine cubes) and cut the onion into thin rings.
  2. 2. Fry the potato slices and onions in a generous amount of olive oil in a large pan over medium heat for 15 minutes until soft but not brown.
  3. 3. Preheat the oven to 200 degrees. Beat the eggs in a large bowl and season with salt. Drain the potatoes and onions (save the oil) and stir them into the eggs. Let the mixture sit for 5 minutes.
  4. 4. Pour a tablespoon of olive oil into an oven-safe dish. Pour the egg-potato mixture into the dish. Bake for 12-15 minutes in the oven until the surface is lightly golden brown and the inside is set.
  5. 5. Remove the tortilla from the oven. Let it cool for 5 minutes before cutting it into wedges. Serve warm or at room temperature.
