  1. 1. Peel the potatoes and cut them into very thin slices or small cubes.
  2. 2. Wash the pepper, remove the insides and cut into thin strips. Cut the onion finely as well.
  3. 3. Heat the oil in a non-stick pan (approx. 20-24 cm diameter) over medium heat.
  4. 4. Add the potatoes, pepper, and onion to the pan. Cook the vegetables until soft and golden brown, without burning them. This takes about 15 minutes.
  5. 5. Whisk the eggs in a large bowl with salt and chili flakes.
  6. 6. Add the warm vegetables to the egg mixture and let it sit for 2 minutes so the vegetables absorb the egg liquid.
  7. 7. Heat the pan again with a small splash of oil. Pour the egg-vegetable mixture into the pan. Press it flat gently.
  8. 8. Cook the tortilla over medium heat for approx. 3-4 minutes until the bottom is firm and golden brown.
  9. 9. Take a large, flat plate. Place the pan over the plate and invert the tortilla onto the plate.
  10. 10. Slide the tortilla carefully back into the pan to cook the other side. Cook for another 2-3 minutes.
  11. 11. Invert the finished tortilla onto the serving plate. Cut it into 8 triangular pieces and serve warm.
