🍳 Hidden Potato Tortilla with Peppers

Ingredients
- 300 g Potatoes
- 1 große Red pepper
- 1 kleine Onion
- 4 große Eggs (Size L)
- 4 EL Sunflower oil
- 1 TL Salt
- 1/2 TL Chili flakes (optional)
Instructions
- 1. Peel the potatoes and cut them into very thin slices or small cubes.
- 2. Wash the pepper, remove the insides and cut into thin strips. Cut the onion finely as well.
- 3. Heat the oil in a non-stick pan (approx. 20-24 cm diameter) over medium heat.
- 4. Add the potatoes, pepper, and onion to the pan. Cook the vegetables until soft and golden brown, without burning them. This takes about 15 minutes.
- 5. Whisk the eggs in a large bowl with salt and chili flakes.
- 6. Add the warm vegetables to the egg mixture and let it sit for 2 minutes so the vegetables absorb the egg liquid.
- 7. Heat the pan again with a small splash of oil. Pour the egg-vegetable mixture into the pan. Press it flat gently.
- 8. Cook the tortilla over medium heat for approx. 3-4 minutes until the bottom is firm and golden brown.
- 9. Take a large, flat plate. Place the pan over the plate and invert the tortilla onto the plate.
- 10. Slide the tortilla carefully back into the pan to cook the other side. Cook for another 2-3 minutes.
- 11. Invert the finished tortilla onto the serving plate. Cut it into 8 triangular pieces and serve warm.
