  1. 1. Wash the potatoes thoroughly and slice them thinly.
  2. 2. Dice the bacon into small squares.
  3. 3. Dice the onions into fine cubes.
  4. 4. Fry the bacon in a frying pan without additional oil over medium heat until crispy.
  5. 5. Add the onions and sauté until translucent, about 5 minutes.
  6. 6. Add the potato slices to the pan, salt and pepper. Cook over medium heat until potatoes are tender, about 10 minutes. Use a lid.
  7. 7. Whisk the eggs in a large bowl with a fork.
  8. 8. Gently mix the potato-onion mixture with the eggs. Wait 2 minutes.
  9. 9. Pour the mixture back into the (clean) frying pan with some new oil. Fry the side until golden brown over medium heat, approx. 4 minutes.
  10. 10. Invert the tortilla onto a large plate and slide it back into the pan for the second side. Fry approx. 3 minutes.
  11. 11. Cut the tortilla into four pieces and serve warm.
