🥔 Bubalesa Tortilla with Pressed Potatoes

Ingredients
- 600 g Potatoes (waxy)
- 100 g Bacon (smoked)
- 150 g Onions
- 4 Eggs (Size M)
- 40 ml Olive oil
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Wash the potatoes thoroughly and slice them thinly.
- 2. Dice the bacon into small squares.
- 3. Dice the onions into fine cubes.
- 4. Fry the bacon in a frying pan without additional oil over medium heat until crispy.
- 5. Add the onions and sauté until translucent, about 5 minutes.
- 6. Add the potato slices to the pan, salt and pepper. Cook over medium heat until potatoes are tender, about 10 minutes. Use a lid.
- 7. Whisk the eggs in a large bowl with a fork.
- 8. Gently mix the potato-onion mixture with the eggs. Wait 2 minutes.
- 9. Pour the mixture back into the (clean) frying pan with some new oil. Fry the side until golden brown over medium heat, approx. 4 minutes.
- 10. Invert the tortilla onto a large plate and slide it back into the pan for the second side. Fry approx. 3 minutes.
- 11. Cut the tortilla into four pieces and serve warm.
