  1. 1. Heat the milk with the cinnamon stick and lemon zest in a pot until steaming. Remove from heat and let cool for 10 minutes. Remove cinnamon and zest.
  2. 2. Dip the bread slices briefly into the warm milk until soft but not falling apart. Remove them and let them drain slightly.
  3. 3. Whisk the eggs in a shallow bowl.
  4. 4. Coat the soaked bread slices in the eggs, ensuring they are fully covered.
  5. 5. Fry the slices in a pan with hot oil until golden brown on both sides. Remove them and place on kitchen paper.
  6. 6. Mix the sugar with a pinch of cinnamon (optional). Moisten the warm Torrijas with honey and sprinkle with the sugar mixture.
