  1. 1. Wash the vegetables and cut the zucchini, eggplant, and peppers into small cubes.
  2. 2. Cut the onions into fine dice.
  3. 3. Heat the olive oil in a large pot and sauté the onions over medium heat for 5 minutes until translucent.
  4. 4. Add the eggplant and pepper cubes and fry them for 5 minutes.
  5. 5. Add the zucchini and fry it for a further 3 minutes.
  6. 6. Pour in the tomatoes, salt the vegetables, and stir everything together.
  7. 7. Let the stew simmer on low heat for 20 minutes until the vegetables are tender.
  8. 8. Sprinkle the chopped parsley over it and serve the pisto warm or at room temperature.
