🍆 Simple Pisto Manchego (Vegetable Stew)

Ingredients
- 200 g Zucchini
- 200 g Eggplant
- 200 g Peppers (red and yellow)
- 150 g Onions
- 400 g Tomatoes (peeled, canned)
- 30 ml Olive oil
- 5 g Salt
- 10 g Fresh parsley (chopped)
Instructions
- 1. Wash the vegetables and cut the zucchini, eggplant, and peppers into small cubes.
- 2. Cut the onions into fine dice.
- 3. Heat the olive oil in a large pot and sauté the onions over medium heat for 5 minutes until translucent.
- 4. Add the eggplant and pepper cubes and fry them for 5 minutes.
- 5. Add the zucchini and fry it for a further 3 minutes.
- 6. Pour in the tomatoes, salt the vegetables, and stir everything together.
- 7. Let the stew simmer on low heat for 20 minutes until the vegetables are tender.
- 8. Sprinkle the chopped parsley over it and serve the pisto warm or at room temperature.
