🍲 Tomato-Sage Stew with Crispy Garlic Croutons

Ingredients
- 800 g Ripe tomatoes
- 2 Stk. Onions
- 6 Stk. Garlic cloves
- 1 Bund Basil
- 500 ml Meat stock
- 4 EL Olive oil
- 1 TL Chili flakes
- 1 TL Salt
- 0.5 TL Black pepper
Instructions
- 1. Dice the onions finely and slice the garlic thinly.
- 2. Heat the olive oil in a large pot and sauté the onions over medium heat until translucent for 5 minutes.
- 3. Add the garlic and chili flakes and sauté for 1 minute until fragrant.
- 4. Wash the tomatoes, remove the core, and chop them into coarse chunks. Add them to the pot.
- 5. Pour in the meat stock, season generously with salt and pepper.
- 6. Let the stew simmer on low heat for 20 minutes.
- 7. Roughly chop the basil with a knife and stir it in.
- 8. Fry the garlic slices in some oil in a pan until golden brown and add them as a topping to the soup.
