  2. 2. Slice the galangal and lemongrass and bring them to a boil with the chicken broth in a pot.
  3. 3. Add the chicken pieces and cook for about 10 minutes over medium heat.
  4. 4. Add the coconut milk, lime juice, and chopped chili and stir well.
  5. 5. Remove the pot from heat and stir in freshly chopped coriander.
  6. 6. Serve the soup in bowls and garnish with additional coriander if desired.
