🍲 Tom Kha Gai - Thai Coconut Chicken Soup

Ingredients
- 200g Chicken breast
- 400ml Coconut milk
- 100g Mushrooms
- 1 Stange Lemongrass
- 2 Scheiben Galangal
- 3 Blätter Lime leaves
Instructions
- 1. Slice chicken breast into thin pieces and place in a pot.
- 2. Add coconut milk, sliced lemongrass, and galangal and bring to a boil.
- 3. Add mushrooms and lime leaves and simmer for about 10 minutes.
- 4. Season with salt and lime juice and stir well.
- 5. Serve the soup hot, garnished with fresh coriander if desired.
