  1. 1. Boil the eggs in a pot with water and salt for 10 minutes. Let them cool, peel, and cut them into quarters.
  2. 2. Cut the bacon into approx. 1 cm thick slices. Fry the bacon slices in a non-stick pan without additional fat on medium heat until golden brown and crispy.
  3. 3. Mix the balsamic vinegar with olive oil, salt, and pepper in a small bowl.
  4. 4. Finely chop the chives.
  5. 5. Arrange the cooled eggs on a plate. Drizzle with the pan fat (from the bacon). Pour the vinegar-oil mixture over the eggs. Place the crispy bacon slices decoratively on top. Sprinkle everything with chives and serve immediately.
