🍆 Colorful Tian with Rosemary and Thyme

Ingredients
- 200 g Potato
- 150 g Zucchini
- 150 g Eggplant
- 100 g Onion
- 20 ml Olive Oil
- 5 g Fresh Rosemary
- 3 g Fresh Thyme
- 3 g Salt
- 1 g Black Pepper
Instructions
- 1. Preheat the oven to 190 degrees Celsius.
- 2. Peel the potato and slice it thinly.
- 3. Slice the zucchini and eggplant thinly as well.
- 4. Cut the onion into fine cubes and sauté them lightly in a pot.
- 5. Mix the sautéed vegetables with olive oil, salt, and pepper.
- 6. Place the raw vegetable slices alternately on top of each other in a baking dish.
- 7. Add the seasoned onion mixture between the vegetable layers.
- 8. Garnish the tian with finely chopped rosemary and thyme.
- 9. Bake the tian for 30 minutes in the oven until the vegetables are tender.
- 10. Let the tian cool for 5 minutes before serving.
