  1. 1. Preheat the oven to 190 degrees Celsius.
  2. 2. Peel the potato and slice it thinly.
  3. 3. Slice the zucchini and eggplant thinly as well.
  4. 4. Cut the onion into fine cubes and sauté them lightly in a pot.
  5. 5. Mix the sautéed vegetables with olive oil, salt, and pepper.
  6. 6. Place the raw vegetable slices alternately on top of each other in a baking dish.
  7. 7. Add the seasoned onion mixture between the vegetable layers.
  8. 8. Garnish the tian with finely chopped rosemary and thyme.
  9. 9. Bake the tian for 30 minutes in the oven until the vegetables are tender.
  10. 10. Let the tian cool for 5 minutes before serving.
