  1. 1. Wash the zucchini and eggplant thoroughly and cut them into thick slices.
  2. 2. Grease a baking sheet or a dablette (a shallow, rectangular baking dish) with some oil.
  3. 3. Mix the raspberry vinegar and the remaining olive oil in a small bowl.
  4. 4. Place the vegetable slices side by side in the dish and brush them with the vinegar-oil mixture.
  5. 5. Scatter the fresh thyme leaves evenly over the vegetables.
  6. 6. Bake the vegetables at 200 degrees Celsius convection for 25 minutes until golden brown.
