🍲 Thai Pumpkin Soup

Ingredients
- 500g Hokkaido Pumpkin
- 400ml Coconut Milk
- 1 Onion
- 2 Zehen Garlic
- 1 Stück Ginger
- 500ml Vegetable Broth
- 1 Bund Cilantro
- 1 TL Sugar
Instructions
- 1. Peel, seed, and cube the pumpkin. Chop onion, garlic, and ginger.
- 2. Sauté onion, garlic, and ginger in a large pot over medium heat until soft.
- 3. Add pumpkin cubes and sauté for 5 minutes.
- 4. Add vegetable broth and coconut milk, bring to a boil, then let simmer for 20 minutes.
- 5. Blend the soup and garnish with fresh cilantro.
