🍝 Thai Noodle Soup

Ingredients
- 100 g rice noodles
- 400 ml vegetable broth
- 100 g bok choy
- 200 ml water
- 30 g cilantro
- 1 EL chili paste
- 100 g mushrooms
- 2 EL lime juice
- 1 spring onion
Instructions
- 1. Soak rice noodles in hot water.
- 2. Heat vegetable broth in a pot.
- 3. Add bok choy and mushrooms and cook until soft.
- 4. Add chili paste and soaked noodles.
- 5. Garnish with lime juice, cilantro, and spring onions, then serve.
