🍛 Thai Airfryer Shrimp Curry

Ingredients
- 300g Shrimp (peeled, deveined)
- 1 Onions
- 3 Zehen Garlic
- 1 Chili (fresh)
- 2 EL Thai Curry Powder
- 400ml Coconut Milk
- 2 Limes (freshly squeezed)
- 1 Bund Fresh Coriander
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Wash the 300 g shrimp under cold water and pat them dry with paper towels.
- 2. Peel the 1 onion and dice it finely.
- 3. Peel the 3 garlic cloves and chop them finely.
- 4. Wash the 1 chili, remove the stem and chop it finely.
- 5. Squeeze the juice from the 2 limes into a small bowl.
- 6. Wash the 1 bunch of cilantro and roughly chop the leaves.
- 7. Preheat the air fryer to 180 °C until it beeps.
- 8. Put the 2 tbsp Thai curry powder, 1 tsp salt and 1 tsp pepper into a bowl.
- 9. Coat the shrimp in the spice mixture until they are fully covered.
- 10. Place the seasoned shrimp in the air fryer basket and close it.
- 11. Cook the shrimp in the air fryer at 180 °C for 5 minutes, until they are pink and firm.
- 12. Pour 1 tbsp oil into a large pan and heat it over medium heat.
- 13. Fry the onion cubes for 3 minutes, until they are translucent and soft.
- 14. Add the chopped garlic and chili and fry for 1 minute, until fragrant.
- 15. Pour in the 400 ml coconut milk and let the sauce simmer gently for 2 minutes.
- 16. Stir the cooked shrimp and lime juice into the hot sauce.
- 17. Spoon the curry onto plates, sprinkle with cilantro and serve immediately.
