  1. 1. Wash the 300 g shrimp under cold water and pat them dry with paper towels.
  2. 2. Peel the 1 onion and dice it finely.
  3. 3. Peel the 3 garlic cloves and chop them finely.
  4. 4. Wash the 1 chili, remove the stem and chop it finely.
  5. 5. Squeeze the juice from the 2 limes into a small bowl.
  6. 6. Wash the 1 bunch of cilantro and roughly chop the leaves.
  7. 7. Preheat the air fryer to 180 °C until it beeps.
  8. 8. Put the 2 tbsp Thai curry powder, 1 tsp salt and 1 tsp pepper into a bowl.
  9. 9. Coat the shrimp in the spice mixture until they are fully covered.
  10. 10. Place the seasoned shrimp in the air fryer basket and close it.
  11. 11. Cook the shrimp in the air fryer at 180 °C for 5 minutes, until they are pink and firm.
  12. 12. Pour 1 tbsp oil into a large pan and heat it over medium heat.
  13. 13. Fry the onion cubes for 3 minutes, until they are translucent and soft.
  14. 14. Add the chopped garlic and chili and fry for 1 minute, until fragrant.
  15. 15. Pour in the 400 ml coconut milk and let the sauce simmer gently for 2 minutes.
  16. 16. Stir the cooked shrimp and lime juice into the hot sauce.
  17. 17. Spoon the curry onto plates, sprinkle with cilantro and serve immediately.
