  1. 1. Cut the chicken breast into strips about 1 cm thick. Tip: Don't wash it, just pat it dry so it browns.
  2. 2. Peel the onion and dice it finely. Important: Cut it evenly small for quick cooking.
  3. 3. Peel 2 garlic cloves and chop them finely. Caution: Don't let them burn, or they'll taste bitter.
  4. 4. Wash the red bell pepper and remove the core. Cut it into strips about 1 cm wide.
  5. 5. Add lime juice, fish sauce, chili paste, sesame oil, and soy sauce to a bowl. Stir the marinade until smooth.
  6. 6. Add the chicken, onion, garlic, and bell pepper to the marinade. Toss well to coat everything.
  7. 7. Preheat the air fryer to 180 °C. Wait about 3 minutes until it’s hot. This is step 7.
  8. 8. Place the mixture in the air fryer basket. Spread it out in a single layer so air can circulate.
  9. 9. Cook the gyros for about 10 minutes at 180 °C until golden brown. Turn the ingredients well after 5 minutes.
  10. 10. Check for doneness: The meat should be cooked through white and the onions soft. Test: A knife should slide in easily.
  11. 11. Remove the basket and let the gyros rest for 2 minutes. This allows the juices to redistribute in the meat.
  12. 12. Wash the coriander leaves and dry them gently. Pluck the leaves from the tough stems.
  13. 13. Serve the gyros on plates. Sprinkle the fresh coriander leaves generously over the top for garnish.
  14. 14. Serve the dish immediately. It’s perfect when the meat is juicy and the bell pepper still has a bit of bite.
