  1. 1. Cut the chicken fillet into roughly 2 cm cubes. Important: Don't wash it, just pat it dry to avoid germs.
  2. 2. Peel the carrot and cut it into thin sticks. This ensures they have the same cooking time as the other vegetables.
  3. 3. Dice the onion and coarsely chop the 2 garlic cloves. Coarse chopping prevents the garlic from burning.
  4. 4. Wash the sugar snap peas and remove the tough strings. Place them in a bowl and set aside.
  5. 5. Cut the lemongrass into approximately 3 cm pieces. These will release flavour but aren't eaten.
  6. 6. Pour the 150 g rice noodles into a pot and cover them with boiling water. Let them soak for 5 minutes, until they are soft.
  7. 7. Drain the noodles and briefly rinse them with cold water. This stops the cooking process and prevents sticking.
  8. 8. Mix the soy sauce, chili paste and lemon juice in a small bowl. Fully dissolve the paste in the mixture.
  9. 9. Preheat the air fryer to 190 °C. This is important so the meat sears instead of steams.
  10. 10. Add 1 tablespoon of oil, the diced onion and garlic to the air fryer basket. Shake the basket well to coat everything.
  11. 11. Cook the vegetables in the air fryer at 190 °C for 5 minutes. The vegetables should be slightly soft, but still have a bite.
  12. 12. Remove the basket and add the chicken cubes and lemongrass pieces. Shake vigorously to coat the meat with oil.
  13. 13. Cook the chicken in the air fryer at 190 °C for 8 minutes. Turn after 4 minutes. The meat should be cooked through and golden brown.
  14. 14. Add the drained noodles, sugar snap peas and the soy sauce mixture to the basket. Shake gently to coat everything evenly.
  15. 15. Cook the noodles in the air fryer at 190 °C for 3 minutes. The sauce should now thicken slightly and cling to the noodles.
  16. 16. Remove the lemongrass pieces and serve immediately. It’s perfect when the meat is juicy and the noodles are glossy.
