  1. 1. Cut the 400 g chicken breast fillet into narrow, finger-thick strips.
  2. 2. Remove the tough core and the lower woody ends from the 2 stalks of lemongrass.
  3. 3. Flatten the lemongrass stalks and cut them into pieces approximately 3 cm long.
  4. 4. Peel the onion and dice it finely.
  5. 5. Peel the 2 garlic cloves and chop them very finely.
  6. 6. Remove the stem from the chili and chop it finely (Caution: use gloves).
  7. 7. Pat the chicken dry with paper towels – never wash it, as this spreads germs.
  8. 8. Put the meat, onion, garlic, chili, and lemongrass into a bowl.
  9. 9. Pour 2 tablespoons of soy sauce and 1 tablespoon of fish sauce over the mixture.
  10. 10. Add 2 tablespoons of olive oil and mix everything well with your hands.
  11. 11. Let the marinade rest for 15 minutes so the meat absorbs the flavour.
  12. 12. Preheat the air fryer to 180 °C and heat it for 3 minutes.
  13. 13. Put the marinated strips into the air fryer basket and spread them out flat.
  14. 14. Cook the meat for 15 minutes at 180 °C and shake the basket vigorously after 7 minutes, until it is golden brown.
  15. 15. Make sure there is no more pink meat in the centre before you take it out.
  16. 16. Pluck the leaves from the 1 bunch of coriander and chop them finely.
  17. 17. Set aside a small portion of coriander for garnishing.
  18. 18. Add the remaining coriander to the warm air fryer basket immediately after cooking.
  19. 19. Shake the basket briefly to mix the coriander with the meat.
  20. 20. Serve the gyros immediately, garnished with the remaining fresh coriander.
