🍐 Tarte Tatin Pear & Pesto

Ingredients
- 320 g Puff pastry
- 600 g Firm pears, halved and cored
- 100 g Sugar
- 50 g Butter
- 80 g Basil pesto
- 2 g Cinnamon
- 100 g Bacon cubes
Instructions
- 1. Preheat the oven to 200°C. Cut the pears into equal-sized quarters.
- 2. Melt the butter in an ovenproof pan (24 cm). Stir in the sugar and let it simmer into a caramel without stirring.
- 3. Arrange the pear halves closely in the caramel. Sprinkle with cinnamon and cook for 5 minutes until slightly tender.
- 4. Fry the bacon cubes in a separate pan until crispy and add them to the pears.
- 5. Spread the pesto thinly onto the puff pastry and place it with the pesto side down over the pears. Press the edges firmly.
- 6. Bake the tart for 25 minutes in the oven until the pastry is golden brown and puffed up.
- 7. Let the tart cool in the pan for 2 minutes. Place a large plate over the pan and quickly flip it over so the pears are on top.
