🥧 Savory Tarte Tatin with Herb Potatoes

Ingredients
- 1 Rolle (ca. 250 g) Puff pastry (thin roll)
- 600 g Waxy potatoes
- 150 g Bacon cubes (streaky)
- 200 g Cream cheese (double cream)
- 2 EL Fresh herbs (chives, parsley)
- 30 g Butter
- nach Bedarf Salt and pepper
Instructions
- 1. Preheat oven to 200 °C (392 °F) with top/bottom heat. Peel potatoes and slice into approx. 1 cm thick rounds.
- 2. Fry bacon cubes in an oven-safe skillet (approx. 24 cm / 10 inches) without fat until golden brown. Remove and set aside.
- 3. Melt butter in the same pan. Arrange potato slices in a circular pattern tightly against each other in the pan. Fry slowly for 5 minutes until lightly browned. Reduce heat, cover with a lid, and cook for 10 minutes until potatoes are tender.
- 4. In a bowl, stir cream cheese until smooth with the chopped herbs, salt, and pepper.
- 5. Roll out puff pastry and place it over the potatoes in the pan so that edges slightly overhang. Spread the cream cheese mixture evenly over the pastry.
- 6. Distribute bacon cubes evenly over the cream cheese layer. Bake savory Tarte Tatin for 20-25 minutes until the pastry is golden brown and puffed.
- 7. Let the pan rest for approx. 5 minutes (important!). Invert the savory Tarte Tatin onto a large plate so the potato layer is on top. Cut into quarters and serve hot.
