  1. 1. Preheat the oven to 200 °C (390 °F) conventional mode. Line a baking sheet with parchment paper.
  2. 2. Fry the bacon cubes in a pan until crispy. Remove them from the pan and set aside. Pour off excess fat, but leave one tablespoon behind.
  3. 3. Peel the apples, remove the core, and cut them into thin wedges. Peel and finely dice the onions.
  4. 4. Sauté the onions in the remaining fat for 5 minutes until soft. Add the apple wedges and sauté for another 3 minutes. Season with salt, pepper, and nutmeg.
  5. 5. Roll out the puff pastry on the parchment paper into a rectangle. Prick the base several times with a fork.
  6. 6. Whisk the crème fraîche (add eggs if using, otherwise just crème fraîche) and pour half over the pastry. Spread the apple-onion mixture evenly on top.
  7. 7. Spread the remaining crème fraîche on top. Distribute the grated Gouda and crispy bacon evenly.
  8. 8. Bake the tart for 25-30 minutes until golden brown and bubbling. Let it cool for 5 minutes before cutting into squares.
