  1. 1. Preheat the oven to 180 degrees Celsius (conventional heat).
  2. 2. Wash the leek thoroughly and slice it into thin rings.
  3. 3. Sauté the leek in a pan with a splash of oil for 10 minutes until soft, then drain and let cool.
  4. 4. Whisk the cream cheese, eggs, thyme, salt, and pepper in a bowl until smooth.
  5. 5. Line a springform pan (26 cm) with the shortcrust pastry. Prick the bottom multiple times with a fork.
  6. 6. Spread the leek rings evenly over the pastry base.
  7. 7. Pour the cream cheese and egg mixture over the leeks.
  8. 8. Drape the anchovy fillets in a cross pattern over the surface and sprinkle the grated cheese over it.
  9. 9. Bake the tart for 35 minutes until the filling is set and golden brown.
  10. 10. Let the tart cool in the pan for 10 minutes before removing from the pan and serving.
