  1. 1. Preheat the oven to 200 °C (top and bottom heat).
  2. 2. Divide the puff pastry according to package instructions so it fits a 26 cm springform pan. Poke the bottom several times with a fork to prevent it from rising.
  3. 3. Crumble the Gorgonzola in a bowl and mix it with the cream cheese.
  4. 4. Whisk the eggs and stir them into the cheese mixture.
  5. 5. Strip the thyme leaves from the stems and fold them in.
  6. 6. Pour the mixture into the pastry pan and sprinkle the walnuts on top.
  7. 7. Bake the tart for approx. 25-30 minutes until golden brown and cooked through.
  8. 8. Serve the tart drizzled with honey while warm.
