🍮 Soft Bilbao-Style Yolk Tart

Ingredients
- 10 Stk Egg yolks
- 250 g Sugar
- 1 EL Lemon juice
- 500 g Mascarpone
- 100 g Butter
- 1 Stk Shortcrust pastry base
Instructions
- 1. Preheat the oven to 350°F (180°C) conventional.
- 2. Whisk the egg yolks and sugar in a large bowl until pale yellow and creamy.
- 3. Stir the lemon juice into the egg yolk mixture.
- 4. Let the mixture rest for 5 minutes to allow flavors to develop.
- 5. Warm the mascarpone over low heat in a saucepan until soft, but do not boil.
- 6. Slowly fold the soft mascarpone into the egg yolk mixture.
- 7. Cut the butter into small cubes and stir them gradually into the cream until smooth.
- 8. Pour the filling into the prepared shortcrust pastry base.
- 9. Bake the tart for 30 to 35 minutes in the oven until the edges are lightly golden brown but the center still jiggles slightly.
- 10. Let the tart cool completely before slicing and serving.
