  2. 2. Whisk the egg yolks and sugar in a large bowl until pale yellow and creamy.
  3. 3. Stir the lemon juice into the egg yolk mixture.
  4. 4. Let the mixture rest for 5 minutes to allow flavors to develop.
  5. 5. Warm the mascarpone over low heat in a saucepan until soft, but do not boil.
  6. 6. Slowly fold the soft mascarpone into the egg yolk mixture.
  7. 7. Cut the butter into small cubes and stir them gradually into the cream until smooth.
  8. 8. Pour the filling into the prepared shortcrust pastry base.
  9. 9. Bake the tart for 30 to 35 minutes in the oven until the edges are lightly golden brown but the center still jiggles slightly.
  10. 10. Let the tart cool completely before slicing and serving.
