  1. 1. Whisk egg yolks, sugar, and lemon zest in a bowl until the mixture is pale and creamy.
  2. 2. Add milk and the cinnamon stick to a pot and heat slowly until it almost boils. Remove the cinnamon stick.
  3. 3. Slowly pour the hot milk into the eggs while stirring constantly to prevent lumps.
  4. 4. Simmer the mixture over medium heat, stirring frequently, until it thickens (about 5 minutes). Remove from heat.
  5. 5. Let the cream cool. Whip the cream to stiff peaks.
  6. 6. Gently fold the whipped cream into the cooled cream.
  7. 7. Dip the ladyfingers briefly in a little milk and place them in a baking dish to form a layer.
  8. 8. Add a layer of the cream mixture over the biscuits. Repeat the layers (biscuits, cream) and finish with the cream.
  9. 9. Place the tart in the refrigerator for at least 4 hours to set. Sprinkle with chocolate sprinkles before serving.
