🍖 Chicken Tagine with Apricots

Ingredients
- 400 g Chicken thighs
- 100 g Dried apricots
- 1 Onion
- 2 Garlic cloves
- 2 EL Olive oil
- 250 ml Vegetable broth
Instructions
- 1. Finely chop the onion and garlic.
- 2. Heat olive oil in a large pot and sear the chicken on all sides until golden brown.
- 3. Add the onion and garlic, sautéing for another 3-4 minutes until soft.
- 4. Add the dried apricots and vegetable broth, bring to a boil, then reduce heat.
- 5. Cover and simmer for 30 minutes.
