  1. 1. Cut the pork belly into large pieces and season with salt, pepper, cumin, and smoked paprika.
  2. 2. In a large pot, sauté the chopped shallots and minced garlic until golden brown.
  3. 3. Add the seasoned pork belly pieces and sear on all sides until browned.
  4. 4. Add some water and lime juice to the pot, cover, and simmer on low heat for 3-4 hours until the meat is tender.
  5. 5. Remove the meat, shred it, and place it on a baking sheet in the oven at 220°C for about 10-15 minutes to crisp up.
  6. 6. Warm the tortillas briefly, then add the carnitas, onion, cilantro, and avocado on top.
  7. 7. Serve immediately and enjoy!
