1. Peel and finely chop garlic and ginger. Mix soy sauce, vinegar, Sambal Oelek, garlic, and ginger. Clean, wash, and slice spring onions diagonally into rings and/or fine strips. Drain pineapple and cut into small cubes.
2. Set aside some green spring onion rings and sauté the rest in hot oil for 2 minutes. Add pineapple pieces and juice along with the prepared sauce, stir well, bring to a brief boil, and season with sugar.
3. Cut the fish fillets into pieces and season with salt and lemon juice.
4. For the batter, mix both types of flour with a pinch of salt. Separate the eggs and beat the egg whites until stiff. Combine the flour with the egg yolks and white wine to form a thick batter, then fold in the egg whites and remaining coriander.
5. Dip the fish pieces in the batter and deep-fry in hot oil for 3 to 4 minutes. Drain the fried fish pieces briefly on kitchen paper and serve hot with the sweet and sour sauce. Serve with rice.
