🥗 Sweet Potato Bowl with Brussels Sprouts and Herbs

Ingredients
- 300 g Sweet Potato
- 200 g Brussels Sprouts
- 100 g Quinoa
- 2 EL Olive Oil
- 1 Bund Fresh Thyme
- 1 TL Salt
- 0.5 TL Pepper
Instructions
- 1. Preheat the oven to 200°C.
- 2. Peel and cube sweet potatoes.
- 3. Halve Brussels sprouts and place in a bowl.
- 4. Toss with olive oil, salt, and pepper and roast for 25 minutes.
- 5. Meanwhile, cook quinoa.
- 6. Assemble the bowl: layer quinoa, roasted sweet potato, and Brussels sprouts. Garnish with fresh herbs.
