🥗 Sweet Potato Bowl with Quinoa

Ingredients
- 2 sweet potatoes
- 150 g quinoa
- 150 g spinach
- 1 avocado
- 200 g (Dose) chickpeas
- 2 EL olive oil
- 1 TL salt
- 0.5 TL pepper
Instructions
- 1. Peel and cube sweet potatoes.
- 2. Sauté sweet potatoes in olive oil until soft.
- 3. Cook quinoa according to package instructions.
- 4. Drain and rinse chickpeas.
- 5. Arrange quinoa, sweet potatoes, chickpeas, and spinach in bowls.
- 6. Slice avocado and place on top.
- 7. Season with salt and pepper and serve.
