🍽️ Stuffed Zucchini with Ground Beef in the Air Fryer

Ingredients
- 2 Zucchini
- 200g Ground Beef
- 1 Onion
- 1 Garlic Clove
- 2 EL Tomato Paste
- 1 Bund Parsley
- 1 TL Salt
- 1 TL Pepper
Instructions
- 1. Wash the 2 zucchini under running water and pat them dry.
- 2. Cut off the ends of the zucchini and halve them lengthwise.
- 3. Scoop out the pulp from the zucchini halves with a spoon.
- 4. Chop the scooped-out zucchini flesh into small cubes and lightly salt it.
- 5. Peel the onion and chop it finely.
- 6. Peel the garlic clove and chop it finely too.
- 7. Heat 1 tablespoon oil in a pan and sauté the onion and garlic for 2 minutes.
- 8. Add the 200g ground meat and cook it until crumbly and brown.
- 9. Stir in the 2 tablespoons tomato paste and cook for 1 minute.
- 10. Remove the pan from the heat and stir in the zucchini cubes and 1 teaspoon salt.
- 11. Chop 1 bunch parsley and mix it into the warm filling.
- 12. Fill the zucchini halves with the meat mixture and press firmly.
- 13. Place the stuffed zucchini in the air fryer basket and spray with oil.
- 14. Cook the zucchini at 180 °C for approximately 15 minutes, turning after 7.5 minutes, until golden brown.
- 15. Sprinkle the zucchini with 1 teaspoon pepper and cook for another 5 minutes.
- 16. Remove the zucchini and check for doneness with a knife.
- 17. Serve the zucchini hot, ensuring the meat is cooked through inside.
