🧀 Comté Cheese and Caramelized Onion Quiche

Ingredients
- 1 Rolle (ca. 250 g) Puff pastry
- 50 g Kerrygold Butter
- 3 große Onions
- 150 g Aged cheese (Comté or Gouda)
- 4 Stück Eggs (Size M)
- 250 ml Heavy cream (30% fat)
- 1 Prise Nutmeg
- 1 Prise Salt
Instructions
- 1. Preheat the oven to 180°C (356°F) conventional mode.
- 2. Slice the onions into thin rings.
- 3. Melt the butter in a large pan over medium heat and cook the onions slowly for 15 minutes until golden brown and caramelized. Stir regularly.
- 4. Remove the pan from the heat and let the onions cool down.
- 5. Roll out the puff pastry on a floured surface to fit a 26 cm (10 inch) springform pan. Place it in the pan and prick the bottom several times with a fork.
- 6. Cut the aged cheese into small cubes.
- 7. Whisk the eggs, cream, nutmeg, and a pinch of salt in a bowl until the mixture is homogeneous.
- 8. Distribute the cheese and the cooled onions evenly over the puff pastry base.
- 9. Pour the egg-cream mixture carefully over the filling.
- 10. Place the quiche in the oven and bake for 35 minutes until golden brown and the center jiggles slightly.
- 11. Remove the quiche from the oven and let it cool in the pan for 10 minutes before cutting.
