  1. 1. Preheat the oven to 180°C (356°F) conventional mode.
  2. 2. Slice the onions into thin rings.
  3. 3. Melt the butter in a large pan over medium heat and cook the onions slowly for 15 minutes until golden brown and caramelized. Stir regularly.
  4. 4. Remove the pan from the heat and let the onions cool down.
  5. 5. Roll out the puff pastry on a floured surface to fit a 26 cm (10 inch) springform pan. Place it in the pan and prick the bottom several times with a fork.
  6. 6. Cut the aged cheese into small cubes.
  7. 7. Whisk the eggs, cream, nutmeg, and a pinch of salt in a bowl until the mixture is homogeneous.
  8. 8. Distribute the cheese and the cooled onions evenly over the puff pastry base.
  9. 9. Pour the egg-cream mixture carefully over the filling.
  10. 10. Place the quiche in the oven and bake for 35 minutes until golden brown and the center jiggles slightly.
  11. 11. Remove the quiche from the oven and let it cool in the pan for 10 minutes before cutting.
