  1. 1. Grease a non-stick skillet (approx. 24 cm) with the butter over medium heat.
  2. 2. Mix the lean curd, half of the goat cheese (crumbled), the eggs, dried onions, salt, and pepper in a bowl until smooth.
  3. 3. Stir the squeezed spinach into the egg mixture.
  4. 4. Pour the mixture into the hot skillet and spread it evenly.
  5. 5. Cook the frittata for 5 minutes over medium heat until the edges are set.
  6. 6. Carefully flip the frittata onto a plate and let it cook for approx. 2 minutes on the other side.
  7. 7. Place the remaining goat cheese on the hot frittata and let it melt under the lid for 3 minutes.
  8. 8. Cut the frittata into 4 equal pieces and serve warm.
