  1. 1. Wash the spinach and dice the bell pepper and onion finely.
  2. 2. Heat the olive oil in a non-stick pan and sauté the onions and peppers over medium heat for 5 minutes until soft.
  3. 3. Add the spinach and cook it for 2 minutes together until it has wilted.
  4. 4. Whisk the eggs in a large bowl, season with salt and pepper, and stir in the vegetable mixture.
  5. 5. Pour the mixture back into the same pan (add a little more oil if necessary). Cook over medium heat for 4 minutes until the edges are set.
  6. 6. Place a large plate over the pan, flip the tortilla quickly, and slide it back into the pan to fry the other side for 3 minutes.
  7. 7. Remove the tortilla from the pan and let it rest for 5 minutes before cutting into wedges.
