🥘 Spanish Spinach Tortilla with Pepper

Ingredients
- 200 g Spinach (fresh)
- 1 Stk Red bell pepper
- 1 Stk White onion
- 6 Stk Eggs (Size M)
- 4 EL Olive oil
- 1 TL Salt
- 0.5 TL Black pepper
Instructions
- 1. Wash the spinach and dice the bell pepper and onion finely.
- 2. Heat the olive oil in a non-stick pan and sauté the onions and peppers over medium heat for 5 minutes until soft.
- 3. Add the spinach and cook it for 2 minutes together until it has wilted.
- 4. Whisk the eggs in a large bowl, season with salt and pepper, and stir in the vegetable mixture.
- 5. Pour the mixture back into the same pan (add a little more oil if necessary). Cook over medium heat for 4 minutes until the edges are set.
- 6. Place a large plate over the pan, flip the tortilla quickly, and slide it back into the pan to fry the other side for 3 minutes.
- 7. Remove the tortilla from the pan and let it rest for 5 minutes before cutting into wedges.
