🌯 Beetroot Spinach Wraps with Cheddar Dip

Ingredients
- 4 Stück Whole wheat wraps
- 200 g Beetroot (cooked)
- 150 g Fresh spinach
- 1 Stück Onion
- 2 Zehen Garlic
- 200 g Skyr (low fat)
- 50 g Cheddar cheese
- 15 ml Lemon juice
- 15 ml Olive oil
- 1 Prise Salt and pepper
Instructions
- 1. Finely chop the onion and garlic. Saute them in a pot with olive oil for 5 minutes until translucent. Add the spinach and sauté for 2 minutes until wilted. Remove from heat.
- 2. Cut the beetroot into thin strips or cubes. Wash and dry the spinach mix well if it is still wet.
- 3. Mix the skyr with the grated cheddar cheese, lemon juice, salt, and pepper to form a smooth dip sauce.
- 4. Warm the wraps briefly in a non-stick pan or microwave until pliable. Distribute the spinach-beetroot mix evenly on each wrap.
- 5. Fold the sides of the wraps inward and roll them up tightly. Cut them in half. Serve the wraps with the cheddar dip on the side.
