  1. 1. Finely chop the onion and garlic. Saute them in a pot with olive oil for 5 minutes until translucent. Add the spinach and sauté for 2 minutes until wilted. Remove from heat.
  2. 2. Cut the beetroot into thin strips or cubes. Wash and dry the spinach mix well if it is still wet.
  3. 3. Mix the skyr with the grated cheddar cheese, lemon juice, salt, and pepper to form a smooth dip sauce.
  4. 4. Warm the wraps briefly in a non-stick pan or microwave until pliable. Distribute the spinach-beetroot mix evenly on each wrap.
  5. 5. Fold the sides of the wraps inward and roll them up tightly. Cut them in half. Serve the wraps with the cheddar dip on the side.
