🥔 Spicy Sausage & Potato Prep Jars

Ingredients
- 200 g Saucisson sec (or salami, thinly sliced)
- 400 g Potatoes (waxy)
- 150 g Peas (frozen)
- 1 Stück Onion
- 2 Stück Cloves of garlic
- 400 g Tomatoes (canned, crushed)
- 1 Teelöffel Paprika powder (smoked)
- 200 ml Broth (chicken or vegetable broth)
- 2 Esslöffel Olive oil
- 1 Bund Parsley (fresh)
Instructions
- 1. Peel the potatoes and cut them into small cubes.
- 2. Finely chop the onion and garlic. Cut the saucisson slices into strips.
- 3. Heat the olive oil in a large pot. Sauté the onion and garlic for 3 minutes until translucent.
- 4. Add the potato cubes and the smoked paprika powder and stir for 1 minute.
- 5. Pour in the crushed tomatoes and the broth. Bring it to a boil.
- 6. Reduce the heat, cover the pot, and let it simmer for 15 minutes until the potatoes are tender.
- 7. Add the saucisson strips and the frozen peas. Cook for another 5 minutes without the lid.
- 8. Roughly chop the parsley and stir it into the mixture.
- 9. Let the mixture cool for 2 minutes before dividing it into 4 meal-prep jars or containers.
- 10. Let the jars cool completely before storing them in the refrigerator.
