  1. 1. Wash the potatoes and cut them into equal-sized sticks (fries shape).
  2. 2. Fry the potato sticks in plenty of oil in the pan or in the oven at 200 degrees until golden brown and crispy (approx. 15-20 minutes, depending on method).
  3. 3. While the potatoes are cooking, pat the steak dry and season it generously with salt and pepper.
  4. 4. Heat a frying pan very hot and place the steak in the hot oil.
  5. 5. Fry the steak for approx. 2-3 minutes per side for Medium-Rare.
  6. 6. Remove the steak from the pan and let it rest on a board for 5 minutes.
  7. 7. Whisk the cold butter with the mustard and chopped chives to make herb butter.
  8. 8. Slice the steak into thick pieces.
  9. 9. Serve the fries with the steak slices and the dollop of herb butter on top.
  10. 10. Enjoy the meal immediately.
