🥩 Speedy Steak-Frites-Style with Herb Butter

Ingredients
- 400 g Beef steak (Tenderloin or Sirloin)
- 500 g Potatoes
- 30 g Butter
- 20 ml Rapeseed oil or Sunflower oil
- 15 g Chives (fresh)
- 3 g Salt
- 1 g Pepper (freshly ground)
- 15 g Mustard (French)
Instructions
- 1. Wash the potatoes and cut them into equal-sized sticks (fries shape).
- 2. Fry the potato sticks in plenty of oil in the pan or in the oven at 200 degrees until golden brown and crispy (approx. 15-20 minutes, depending on method).
- 3. While the potatoes are cooking, pat the steak dry and season it generously with salt and pepper.
- 4. Heat a frying pan very hot and place the steak in the hot oil.
- 5. Fry the steak for approx. 2-3 minutes per side for Medium-Rare.
- 6. Remove the steak from the pan and let it rest on a board for 5 minutes.
- 7. Whisk the cold butter with the mustard and chopped chives to make herb butter.
- 8. Slice the steak into thick pieces.
- 9. Serve the fries with the steak slices and the dollop of herb butter on top.
- 10. Enjoy the meal immediately.
