  1. 1. Peel the potatoes and slice them into very thin slices or small cubes. Wash them and pat dry.
  2. 2. Cut the onions into thin strips. Heat the olive oil in a large non-stick pan over medium heat.
  3. 3. Add the onions and sweat them for 3 minutes. Then add the potatoes. Cover the pan and simmer the mixture for 20 minutes on low heat until the potatoes are very soft.
  4. 4. Whisk the eggs in a large bowl and mix with the salt. Drain the hot potato-onion mixture (save 2 tbsp of oil) and stir it immediately into the eggs. Let the mixture cool for 5 minutes.
  5. 5. Heat some oil in the same pan over medium heat. Pour the egg mixture into the pan and cook for 4 minutes until the bottom is set.
  6. 6. Place a large flat plate over the pan. Hold the plate and pan firmly and flip the pan so the tortilla is on the plate. Slide it back into the pan to cook the other side. Cook for another 3 minutes.
  7. 7. Remove the tortilla from the pan and let it rest for 5 minutes before cutting it into wedges.
