🥘 Spanish Potato Casserole with Garlic Butter

Ingredients
- 1000 g Potatoes (waxy)
- 2 Stück Onions
- 60 g Butter
- 4 Stück Garlic cloves
- 20 g Parsley (fresh)
- 30 ml Olive oil
- 10 g Salt
- 2 g Black pepper
Instructions
- 1. Preheat the oven to 200 degrees. Slice the potatoes thinly (approx. 3 mm thick) and dice the onions finely.
- 2. Melt the butter in a pan. Sauté the onions until translucent and add the chopped garlic. Cook for 2 minutes.
- 3. Remove the pan from the heat. Stir in the parsley, olive oil, salt, and pepper into the onion-butter mixture.
- 4. Brush a baking dish with some olive oil. Layer the potato slices in the dish and add some of the onion mixture between the layers.
- 5. Place the remaining vegetables on top of the potatoes. Cover the dish with aluminum foil and bake for 45 minutes.
- 6. Remove the foil and bake for another 15 minutes uncovered until the surface is golden brown.
