  1. 1. Preheat the oven to 200 degrees. Slice the potatoes thinly (approx. 3 mm thick) and dice the onions finely.
  2. 2. Melt the butter in a pan. Sauté the onions until translucent and add the chopped garlic. Cook for 2 minutes.
  3. 3. Remove the pan from the heat. Stir in the parsley, olive oil, salt, and pepper into the onion-butter mixture.
  4. 4. Brush a baking dish with some olive oil. Layer the potato slices in the dish and add some of the onion mixture between the layers.
  5. 5. Place the remaining vegetables on top of the potatoes. Cover the dish with aluminum foil and bake for 45 minutes.
  6. 6. Remove the foil and bake for another 15 minutes uncovered until the surface is golden brown.
