🍳 Spanish Potato Omelette (Tortilla Española)

Ingredients
- 600 g Potatoes
- 2 Stück Onions
- 6 Stück Eggs
- 100 ml Olive Oil
- 10 g Salt
Instructions
- 1. Peel the potatoes and slice them thinly or cut them into small cubes. Finely chop the onions.
- 2. Heat the olive oil in a large non-stick frying pan (approx. 24 cm diameter) over medium heat. Add the potatoes and onions and simmer them for approx. 15 minutes until soft but not brown. Season lightly with salt.
- 3. Beat the eggs in a large bowl and whisk them lightly before pouring them over the hot potato-onion mixture. Stir gently to combine the eggs with the potatoes. Let the mixture rest for 2 minutes to allow the egg to set slightly.
- 4. Add a small splash of oil and fry the tortilla on both sides until golden brown. Carefully flip it using a plate. Fry the other side for approx. 3 minutes until the inside is still slightly moist but set.
- 5. Remove the tortilla from the pan and let it rest for 5 minutes before cutting it into eighths and serving warm or cold.
