  4. 4. Add the ham cubes and fry for 2 minutes.
  5. 5. Whisk the eggs in a separate bowl with salt and pepper.
  6. 6. Pour the eggs over the potatoes and stir gently until the egg is set but still moist (approx. 2 minutes).
