🍆 Anticonstitucional Pisto (Vegetable Stew)

Ingredients
- 200 g Zucchini
- 200 g Eggplant
- 150 g Bell Pepper (Red)
- 400 g Tomatoes (Peeled, Canned)
- 150 g Onions
- 3 Stk. Garlic Cloves
- 40 ml Olive Oil
- 5 g Salt
- 10 g Parsley (Fresh)
Instructions
- 1. Wash the vegetables. Cut zucchini, eggplant, and bell pepper into approx. 2 cm cubes. Chop the onions finely.
- 2. Heat the olive oil in a large pot. Sauté the onions and chopped garlic for 3 minutes.
- 3. Add the bell pepper and eggplant. Fry everything for 5 minutes over medium heat until the vegetables start to brown slightly.
- 4. Add the zucchini and tomatoes. Season with salt. Simmer until the tomatoes break down and form a sauce (approx. 10 minutes).
- 5. Reduce the heat and let the stew simmer for 15 minutes until the vegetables are very soft. Stir occasionally.
- 6. Chop the parsley roughly. Stir it into the pisto. Serve the dish warm or at room temperature.
