  1. 1. Wash the vegetables. Cut zucchini, eggplant, and bell pepper into approx. 2 cm cubes. Chop the onions finely.
  2. 2. Heat the olive oil in a large pot. Sauté the onions and chopped garlic for 3 minutes.
  3. 3. Add the bell pepper and eggplant. Fry everything for 5 minutes over medium heat until the vegetables start to brown slightly.
  4. 4. Add the zucchini and tomatoes. Season with salt. Simmer until the tomatoes break down and form a sauce (approx. 10 minutes).
  5. 5. Reduce the heat and let the stew simmer for 15 minutes until the vegetables are very soft. Stir occasionally.
  6. 6. Chop the parsley roughly. Stir it into the pisto. Serve the dish warm or at room temperature.
