🥘 Spanish Brown Tortilla (Tortilla Brava)

Ingredients
- 500 g Potatoes
- 150 g Onions
- 6 Stk. Eggs (Size M)
- 100 ml Olive Oil
- 8 g Salt
- 2 g Paprika Powder (Sweet)
Instructions
- 1. Peel the potatoes and slice them thinly. Dice the onions finely.
- 2. Heat the olive oil in a non-stick frying pan over medium heat. Add the potato slices and onions.
- 3. Simmer the vegetables for approx. 15 minutes until soft but not mushy. Stir occasionally.
- 4. Whisk the eggs in a large bowl with the salt and paprika powder. Pour the warm potato-onion mixture into the egg mixture. Wait 2 minutes.
- 5. Heat the pan with a little fresh oil. Pour the mixture back into the pan and press it flat. Fry over medium heat for approx. 5 minutes until the underside is golden brown.
- 6. Carefully flip the tortilla onto a large plate. Slide it back into the pan to fry the other side. Fry for another 3-4 minutes.
- 7. Remove the tortilla from the pan, let it rest for 5 minutes before cutting into squares and serving.
