  1. 1. Peel the potatoes and slice them thinly. Dice the onions finely.
  2. 2. Heat the olive oil in a non-stick frying pan over medium heat. Add the potato slices and onions.
  3. 3. Simmer the vegetables for approx. 15 minutes until soft but not mushy. Stir occasionally.
  4. 4. Whisk the eggs in a large bowl with the salt and paprika powder. Pour the warm potato-onion mixture into the egg mixture. Wait 2 minutes.
  5. 5. Heat the pan with a little fresh oil. Pour the mixture back into the pan and press it flat. Fry over medium heat for approx. 5 minutes until the underside is golden brown.
  6. 6. Carefully flip the tortilla onto a large plate. Slide it back into the pan to fry the other side. Fry for another 3-4 minutes.
  7. 7. Remove the tortilla from the pan, let it rest for 5 minutes before cutting into squares and serving.
