  4. 4. Finely chop the parsley leaves and mix them with the tomato cubes and olive oil.
  5. 5. Melt the butter in a non-stick frying pan over medium heat.
  6. 6. Pour the whisked eggs into the pan and stir gently until they are creamy and set (approx. 3 minutes).
  7. 7. Spread the humbus thickly onto the toasted bread slices.
  8. 8. Place the scrambled eggs on top of the hummus and sprinkle with paprika powder.
