🍳 Late Hummus Toasts with Scrambled Eggs

Ingredients
- 4 Scheiben Whole grain bread
- 100 g Hummus (ready-made)
- 4 Stück Eggs
- 20 g Butter
- 2 g Sweet paprika powder
- 150 g Cherry tomatoes
- 10 ml Olive oil
- 2 g Salt
- 5 g Parsley
Instructions
- 1. Cut the cherry tomatoes into small cubes.
- 2. Whisk the eggs in a bowl with a pinch of salt.
- 3. Toast the bread slices until golden brown.
- 4. Finely chop the parsley leaves and mix them with the tomato cubes and olive oil.
- 5. Melt the butter in a non-stick frying pan over medium heat.
- 6. Pour the whisked eggs into the pan and stir gently until they are creamy and set (approx. 3 minutes).
- 7. Spread the humbus thickly onto the toasted bread slices.
- 8. Place the scrambled eggs on top of the hummus and sprinkle with paprika powder.
- 9. Finish the dish with the tomato-parsley mixture.
